Easy Beef and Potato Soup

Ingredients:
  • Vegetable Oil - 1 Tbsp.
  • Ground Beef* - 1 lb.
  • Large Onions (chopped) - 2
  • Rice (uncooked) - 3 Tbsp.
  • Potatoes (peeled and diced) - 5
  • Sugar - 1 Tbsp.
  • Salt - 1 Tbsp.
  • Can Tomatoes (undrained) - 28 oz.
  • Carrots (peeled and diced) - 4
  • Medium Zucchini, diced (optional) - 1
  • Thyme - 1 tsp.
  • Salt and Pepper - to taste
  • Water - 2 - 3 cup
Directions:
  1. In large saucepan, heat oil and brown beef and onions.
  2. Pour off any excess fat.
  3. Stir in rice, potatoes, sugar, salt, tomatoes, carrots, zucchini, and seasonings.
  4. Add enough water to almost cover all the ingredients.
  5. Bring to a boil.
  6. Cover and simmer over low heat 2 hours, stirring often during last hour to avoid sticking.
  7. Taste and correct seasoning.
Notes:
  1. *Can use stew beef cut in small pieces
  2. Serves 6-8.
