Easy Beef and Potato Soup

- Vegetable Oil - 1 Tbsp.
- Ground Beef* - 1 lb.
- Large Onions (chopped) - 2
- Rice (uncooked) - 3 Tbsp.
- Potatoes (peeled and diced) - 5
- Sugar - 1 Tbsp.
- Salt - 1 Tbsp.
- Can Tomatoes (undrained) - 28 oz.
- Carrots (peeled and diced) - 4
- Medium Zucchini, diced (optional) - 1
- Thyme - 1 tsp.
- Salt and Pepper - to taste
- Water - 2 - 3 cup
- In large saucepan, heat oil and brown beef and onions.
- Pour off any excess fat.
- Stir in rice, potatoes, sugar, salt, tomatoes, carrots, zucchini, and seasonings.
- Add enough water to almost cover all the ingredients.
- Bring to a boil.
- Cover and simmer over low heat 2 hours, stirring often during last hour to avoid sticking.
- Taste and correct seasoning.
- *Can use stew beef cut in small pieces
- Serves 6-8.
