Maple Pumpkin Butter

Description: Spread on toast, add to pancake batter, oatmeal cakes & cookies too! Ingredients are per lb. of pumpkin.
- Nutmeg (fresh ground, dry) - ⅛ tsp.
- Ginger (fresh ground, dry) - ¼ tsp.
- Maple Syrup - ¼ cup
- Cinnamon Sugar - 1 Tbsp.
- Vanilla Extract - 1 tsp.
- Seed 1 Pumpkin.
- Cut pumpkin up in pieces (~1 inch).
- Place in crock pot with enough apple cider to come ½up pumpkin.
- Cook on high until very tender.
- Puree for 3 minutes.
- Add other ingredients.
- Cook in crock pot 2 hours until golden, bubbly + thick.
- freezes well or can - store in fridge.
- This stuff is amazing!
