Maple Pumpkin Butter

Description: Spread on toast, add to pancake batter, oatmeal cakes & cookies too! Ingredients are per lb. of pumpkin.

Ingredients:
  • Nutmeg (fresh ground, dry) - ⅛ tsp.
  • Ginger (fresh ground, dry) - ¼ tsp.
  • Maple Syrup - ¼ cup
  • Cinnamon Sugar - 1 Tbsp.
  • Vanilla Extract - 1 tsp.
Directions:
  1. Seed 1 Pumpkin.
  2. Cut pumpkin up in pieces (~1 inch).
  3. Place in crock pot with enough apple cider to come ½up pumpkin.
  4. Cook on high until very tender.
  5. Puree for 3 minutes.
  6. Add other ingredients.
  7. Cook in crock pot 2 hours until golden, bubbly + thick.
Notes:
  1. freezes well or can - store in fridge.
  2. This stuff is amazing!
