- Ripe Tomatoes (peeled and seeded) - 25 or what you have* (don't measure)
- Onion - 9
- Green Peppers (hot)** - 9
- Vinegar - 2 cup
- Salt - 3 Tbsp.
- Sugar - 3 cup
- Cook tomatoes, onions, pepper, and salt until slightly thickened.
- Add sugar, vinegar, and spice. Cook until thick. (Mix cinnamon into sugar)
- Stir often after adding sugar.
- Can.
- *Use mix of chilis 1-2 lb, 1-2 onion, celery seed, cinnamon, caraway + allspice, tabasco in addition to recipe.
- **Omit hot peppers and use red and green sweet peppers and add 3 tsp. cinnamon. You can then add a couple of hot peppers to this if you like. (That's what I do)
- Drain tomatoes in colander while peeling - won't have to cook so long! (or scoop out extra liquid with mug from pot)
