Chili Sauce

Ingredients:
  • Ripe Tomatoes (peeled and seeded) - 25 or what you have* (don't measure)
  • Onion - 9
  • Green Peppers (hot)** - 9
  • Vinegar - 2 cup
  • Salt - 3 Tbsp.
  • Sugar - 3 cup
Directions:
  1. Cook tomatoes, onions, pepper, and salt until slightly thickened.
  2. Add sugar, vinegar, and spice. Cook until thick. (Mix cinnamon into sugar)
  3. Stir often after adding sugar.
  4. Can.
Notes:
  1. *Use mix of chilis 1-2 lb, 1-2 onion, celery seed, cinnamon, caraway + allspice, tabasco in addition to recipe.
  2. **Omit hot peppers and use red and green sweet peppers and add 3 tsp. cinnamon. You can then add a couple of hot peppers to this if you like. (That's what I do)
  3. Drain tomatoes in colander while peeling - won't have to cook so long! (or scoop out extra liquid with mug from pot)
